Method

 Preparation and cooking

  1. Wash and cut the chicken bones in to small pieces.
  2. Chop all the vegetables roughly to form Mirepoix.
  3. Place all the bones and vegetables in a stock pot.

  5. Bring to boil.  Skim off the dirt. Tie bouquet garni in a muslin bag and add to stock.
  6. Simmer gently and evenly for 3 hours.

Method

Preparation and cooking

  4. Fry vegetables in little oil till brown.
  5. Place all the browned bones and vegetables in a stock pot.

Method

  1. Boil the milk with an onion stuck with a clove and bayleaf
  2. Melt butter in a thick bottomed pan
  3. Add refined flour and cook on slow flame stirring continuously (with a wooden spoon) till it forms a crumbly texture without changing the colour.

  5. Add warm milk slowly, whisking continuously to form a paste. Continue adding the milk till all the milk is consumed.
  6. Bring the sauce to boil. Simmer till you get a desired texture. Add thyme, salt, pepper.

Method

  1. Melt 30 gms butter in a thick bottomed pan
  2. Add refined flour and cook on slow flame stirring continuously ( with a wooden spoon) till it forms a crumbly texture. Continue to cook till it gets fawn or blond colour.   4. Heat butter in a sauce pan. Add chopped vegetable mirepoix . Saute till the vegetables get light brown. Add tomato puree and continue cooking till tomato puree gets cooked.
  5. Add warm Brown Chicken stock and bring to boil.
  6. Add the dissolved brown roux paste in to the boiling liquid stirring continuously, add thyme, peppercorn and bayleaf.  Mother Sauces Recipe

Method

  2. Combine vinegar and peppercorns in a stainless steel bowl and keep on a medium flame to reduce the vinegar. Reduce completely. Add water to the reduction.
  3. Add egg yolks to the reduction. Whip over simmering water till yolks ribbon.
  4. Gradully add warm melted butter whipping continuously over double boiler.
  5. Add lemon juice, adjust the seasoning with salt and white pepper powder.

Method

  2. Gradually add the oil in a thin stream, constantly beating with a baloon whisk.
  3. Continue till all the oil is incorporated and a thick emulsion has formed. (Add a small amount of vinegar as the mayonnaise begins to stiffen.)
  4. Add lemon juice, adjust the seasoning with salt and white pepper powder.
  5. Add a table spoon of hot  water and whisk well.
