Cooking Method : Poaching Fish Mornay Recipe
- Poaching : Place fish fumet in a shallow pan or tray.
- Bring to boil. Lower the temperature and place fish fillets gently in to the fish fumet. Simmer on slow fire for 8-10 minutes or till the fish fillets get cooked. They will turn white after poaching. Astro Motive Astrology by Astrologer Dr. C K Singh
- Remove the cooked fillets on to a serving
dish. Coat with sauce Mornay. Sprinkle cheese on top. Place under
salamander to gratinate till it gets golden brown on top.
Mornay sauce Fish Mornay Recipe
- Prepare a bechamel with flour, butter and
milk.
- Add fish cooking liquor to the bechamel
sauce. Bring to boil. Reduce to get coating consistency. Add grated chhes,
egg yolk and cook on slow fire.
